Serves 4; takes about 30 mins + prep
- 450g potatoes, peeled and chopped
- 3 medium leeks, washed well and cut into 1/2cm rings
- 2 cloves garlic, peeled and finely chopped
- 1 litre stock
- 1/2 tbs olive oil
- Heat the oil, then saute the leeks for about 3 mins.
- Add the potatoes, garlic and stock.
- Simmer for about 25 mins, until the potatoes are soft.
- Let it cool a little, then blend and season.
- Garnish with snipped chives and a swirl of plain yogurt
