From Red Wine and Her Sexy Ex
Hortense's Poulet Provencal
- 4 boneless chicken breasts, cut into cubes
- 1 tbs olive oil
- 1 red onion peeled and finely sliced
- 2 cloves of garlic, peeled and crushed
- 1 tbs paprika
- 1 yellow pepper, deseeded and cut into stripsli>
- 1 red pepper, deseeded and cut into strips
- 1 small courgette, topped, tailed and cut into small dice
- Herbes de Provence
- 1 x 400g tin chopped tomatoes in juice
Serves 4.
Heat the oil in a deep frying pan.
Add the garlic, onion and chicken and saute until chicken is browned on all sides.
Add tomatoes, peppers, courgette and herbs,
Cover and simmer for about 30 minutes.
Serve with couscous or a jacket potato and green beans.
