From Her Celebrity Surgeon
Fran's coriander spice cake
- 2 ripe bananas
- 50g butter
- 150g caster sugar
- 2 eggs
- 225g self-raising flour
Mash bananas.
Cream butter and sugar.
Beat in eggs.
Add flour and banana. Mix well.
Put in a lined 2lb loaf tin.
Bake at 190 degrees C (gas mark 5) for an hour, until springy to touch.
Cool on wire rack.
