From Breakfast at Giovanni's
Fran's chicken arrabbiata
- 4 chicken breasts, sliced
- 1 tbs olive oil
- 1 clove garlic, peeled and crushed
- 1 onion, peeled and finely sliced
- 1 small red chilli, finely chopped
- 1 x 400g tin chopped tomatoes in juice
- 250g mushrooms, washed and sliced
- pasta (50-75g dry weight per person)
Serves 4
Heat the oil in a deep frying pan.
Add the garlic, onion and chicken and sauté until chicken is browned on all sides.
Add tomatoes, chilli and mushrooms. (If you have a bottle of red wine open, add a little to the sauce.)
Cover and simmer for about 30 minutes.
Meanwhile cook the pasta according to directions, and drain.
Serve the chicken and sauce over the pasta with a green salad on the side.
